Double Trouble DaT & Jalapeño Pecan Brittle
1 Tbsp Butter
1/2 c Jalapeños, seeded & finely chopped
1 1/2 c pecan pieces
1 1/2 c sugar
1/2 c light corn syrup
1/8 tsp salt
1 tsp almond extract
2 tsp DaT SaUcE
4 drops red food color, 4 drops yellow food color (optional)
1 tsp baking soda
Melt butter in skillet. Toss in Jalapeños and cook until soft. Set aside. In microwave bowl, combine Nuts, Sugar, Syrup and Salt. Microwave on high 4 minutes. Carefully remove bowl and stir. Add jalapeños and DaT SaUcE and microwave 4 more minutes. Remove bowl and stir again. Add almond extract and microwave another 2 minutes. Remove bowl and stir in baking soda. Pour immediately onto greased cookie sheet or silicone baking sheet. Quickly spread into thin layer. Cool completely and break into pieces. ENJOY!
Tips: Microwaves vary. 1) Candy shoot reach a hard crack stage. (300-310 degrees). 2) Spraying your spoon with cooking spray helps the spreading. 3) The candy starts to harden immediately, spread it thin as fast as you can.
