Sweet n Hot DaT Peanut Brittle
1 c sugar
1/2 c light corn syrup
I c roasted salted peanuts
1 tsp butter
1 tsp almond extract
2 tsp DaT SaUcE
4 drops red food color, 4 drops yellow food color (optional)
1 tsp baking soda
Butter a cookie sheet or use unbuttered Silicone Baking Sheet cover (the silicone sheets actually improve the quality of the candy). Combine sugar and corn syrup in a 2 qt glass bowl and microwave on high 4 minutes. Carefully remove bowl, stir in peanuts and microwave on high 4 more minutes. Stir in butter, almond extract and DaT SaUcE. Microwave on High 1 1/2 minutes more. Stir in baking soda until light and foamy. Immediately pour onto prepared sheet and quickly spread thin. Cool completely and break into pieces.
Tips: Microwaves vary. 1) Candy shoot reach a hard crack stage. (300-310 degrees). 2) Spraying your spoon with cooking spray helps the spreading. 3) The candy starts to harden immediately, spread it thin as fast as you can.
